Ingredients
1 small onion, chopped
1 Tbsp. coconut oil
2 (8-oz) pkgs. sliced mushrooms
2 cups boneless, skinless chicken breasts, cooked and shredded
3 Tbsp. wheat flour
1½ cups fat-free-milk
2 steamed broccoli crowns cut into florets,
1 (5.3-oz) container fat-free plain Greek yogurt
¼ cup reduced fat mayo
¼ tsp salt
¼ tsp. pepper
¾ cup part skim cheese of your choice
Directions
- Preheat oven to 350 degrese.
- Cook and shred your chicken, steam and chop broccoli.
- Heat Coconut oil on medium high heat in a large sauce pan, add mushrooms and onion. Cook untill mushrooms are tender, then add in chicken.
- Sprinkle in whole wheat flour and cook for one minute, stirring occasionally.
- Add in milk and bring mixture to a boil. Cook untill think and bubbly.
- Once mixture has thinckened and in your Broccoli and reduce heat.
- Stir in mayo, yogurt, salt and pepper. Let cook for one minute, stirring to combine
- Lightly spray a baking dish with cooking spray, then add your chicken and broccoli mixture evenly to the dish.
- Top with cheese and let bake in the oven for 20-25 minutes (or untill cheese is starting to brown)
