Recipe of the Week: Broccoli and Chicken Casserole

Take a comfort food classic and turn it into a healthy easy to make dish. Enjoy all the flavor of an american family favorite without all the calories and fat!

Ingredients

1 small onion, chopped
1 Tbsp. coconut oil
2 (8-oz) pkgs. sliced mushrooms
2 cups boneless, skinless chicken breasts, cooked and shredded
3 Tbsp. wheat flour
1½ cups fat-free-milk
2 steamed broccoli crowns cut into florets,
1 (5.3-oz) container fat-free plain Greek yogurt
¼ cup reduced fat mayo
¼ tsp salt
¼ tsp. pepper
¾ cup part skim cheese of your choice

  1. Preheat oven to 350 degrese.
  2. Cook and shred your chicken, steam and chop broccoli.
  3. Heat Coconut oil on medium high heat in a large sauce pan, add mushrooms and onion. Cook untill mushrooms are tender, then add in chicken.
  4. Sprinkle in whole wheat flour and cook for one minute, stirring occasionally.
  5. Add in milk and bring mixture to a boil. Cook untill think and bubbly.
  6. Once mixture has thinckened and in your Broccoli and reduce heat.
  7. Stir in mayo, yogurt, salt and pepper. Let cook for one minute, stirring to combine
  8. Lightly spray a baking dish with cooking spray, then add your chicken and broccoli mixture evenly to the dish.
  9. Top with cheese and let bake in the oven for 20-25 minutes (or untill cheese is starting to brown)
