Recipe of the Week: Zucchini Shrimp Scampi

Zucchini is one of our favorite carb substitutes, and a great way to get your maximum daily amount of veggies needed. This weeks recipe is a light and delicious shrimp scampi. The only hard part about this recipe is slicing the zucchini!

Ingredients

• 2 tbs smart balance butter
• 1 pound shrimp shelled with tail on
• 2 garlic cloves minced
• 3 medium zucchini squash (sliced or julienned)
• Juice of 1 lemon
• 1/4 cup low sodium chicken stock
• salt and pepper to taste
• 1/2 tsp red pepper flakes

Directions

  1. In a large skillet melt the butter on high heat
  2. Once butter is melted add in garlic, red pepper flakes, and shrimp. Cook until shrimp turns pink. If using already cooked shrimp, let the garlic and red pepper flakes cook for
  3. about a minute then add shrimp long enough to heat.
  4. Add in chicken stock and lemon juice, then reduce to a simmer.
  5. Toss in zucchini, salt and pepper. Mix well until zucchini is tender.
  6. Serve garnished with parmesan and fresh parsley if desired.
